Poultry
Boneless Turkey Breast
Preheat the oven at 190C/170C fan/gas 5.
Cook for 40 mins per kilo, plus an additional 20 mins
This is only a guide. Please check meat is piping hot and juices run clear before serving. To check for doneness, insert a digital cooking thermometer into the thickest part of the meat and hold for 30 seconds before taking the reading. It should be at least 75°C.
If using the sausage meat inside the turkey breast, please allow a little longer for cooking.
Whole Turkey
Heat oven to 190C/fan 170C/gas 5, then cook whole turkey for 20 mins per kilo, and then an additional 90 minutes. To test whether the turkey is cooked, push a skewer into the thickest part of the thigh – the juices should run clear. If they are pinkish, cook for 15 mins more, then test again, and repeat until juices are clear.
Use a meat thermometer to ensure the thickest park of the turkey reaches at least 75°C.
Whole Chicken
First brown for 20 mins
at 200°C | 180°C fan | Gas mark 6
Then cook for 1 hr 8 mins at 180°C | 160°C fan | Gas mark 4 for a 1.7kg chicken, and 1 hr 20 mins at 180°C | 160°C fan | Gas mark 4 for a 1.9kg chicken
Then rest for 15 mins in a warm place.
To check for doneness, insert a digital cooking thermometer into the thickest part of the meat and hold for 30 seconds before taking the reading. It should be at least 75°C.
Beef
Topside of Beef
Preheat the oven at 180°C/160° fan/gas 4
· Rare – cook for 20 minutes per 450g plus 20 minutes
· Medium – cook for 25 minutes per 450g plus 25 minutes
· Well done – cook for 30 minutes per 450g plus 30 minutes
Once out of the oven, cover with foil and allow it to stand for at least 20 minutes.

Fillet of Beef
at 220°C | 200°C fan | Gas mark 7 for a 1.5kg cut for rare, or for 50 minutes for medium.
Rest the beef got 15 minutes in a warm place, then serve.
Carvery Rib of Beef
First brown for 20 mins
at 220°C | 200°C fan | Gas mark 7
then cook for 40 minutes per kilo at 190°C | 170°C fan | Gas mark 5 for a medium finish
Gammon and Pork
Horseshoe Gammon
Preheat the oven to 200 C / 400 F / 180 FAN / Gas 6. Cook for 20 minutes, then reduce the heat to 180 C / 350 F / 160 FAN / Gas 4. Allow 30 minutes cooking per 500g.

Boneless Pork Shoulder
Cook on low for 6-8 hours until the meat pulls apart when pressed with two forks. Make sure the pork reaches an internal temperature of 88°C-90°C.
Pork Loin or Leg of Pork
Preheat your oven to 220ºC |Fan200ºC | Gas 7
Start roasting for 30 minutes at the higher temperature above, then reduce the temperature to 180ºC (fan 160ºC, gas 4) for the remaining cooking time.
Calculate the total cooking time based on 35 minutes per 500g, plus 35 minutes extra.
Insert a digital cooking thermometer into the thickest part of the meat and hold for 30 seconds before taking the reading. It should be at least 65°C.
Pigs in Blankets
Heat the oven to 200C/180C fan/gas 6. Cook for 25-30 minutes, ensuring juices run clear and meat is piping hot before serving.

Leg of Lamb
at 220°C | 200°C fan | Gas mark 7
Then cook for 1 hour at 180°C | 160°C fan | Gas mark 4 for 1.5kg, 1 hour 35 minutes for medium

If you need to go out on your selected delivery date you can give instructions for our drivers to leave your order somewhere safe. Due to our products being temperature controlled we would strongly suggest leaving a cool box out where possible. If you do not have a secure place for the order we can always deliver to an alternative address.
In the event that you need to change your delivery instructions please contact us either via email [email protected] or call as soon as possible on 01983 717606. We are unable to do this for December orders.
We deliver to every town on the Isle of Wight 6 days a week. Unfortunately, we do not currently deliver to the UK mainland.
We can’t give you an exact time for delivery, however our delivery routes are planned the morning of dispatch so if you need to pop out you can always give us a call on 01983 717606 and we can give you a rough estimate of when the driver will be in your area. We are unable to provide any updates during December.
